Magdalenas de aceite de oliva

Unas deliciosas magdalenas de aceite para el desayuno o la merienda.



-220gr azúcar
-220gr aceite de oliva
-240gr huevos (2-3huevos)
-310gr harina
-10gr levadura
-40ml brandy
-ralladura de un limón o esencia


Batir lo huevos con el azúcar hasta que este esponjoso. Añadir el aceite en hilo, junto con el brandy. A continuación, la harina con la levadura previamente mezclados junto con laralladura del limón o un chorrito de esencia de limón.

Poner la masa en las capsulas de magdalenas y dejar reposarlas unos 20 minutos antes de meterlas al horno. Espolvorear con un poco de azúcar y al horno a 200º durante 15-20 min con calor abajo y los últimos 5 minutos calor arriba.
